Dr. Rose Otema Baah is a postdoctoral research fellow of UG Nkabom. She is a food scientist with expertise in food chemistry, food processing and technology, postharvest management, and nutrition. As part of her post-doctoral research, Dr. Baah is focusing on assessing postharvest losses and exploring innovative storage solutions within the plantain value chain in Ghana. Her work aims to contribute sustainable strategies to reduce food loss and improve food availability. Driven by a passion for global food security, her ultimate goal is to help mitigate food losses along the food value chain supporting efforts to feed the world’s growing population.
